We know many of you are on spring break right now and enjoying your favorite drinks in different parts of the world. We will be featuring some of our favorites over the next few days. To kick things off, here is a mojito recipe from the Divi Phoenix resort in Aruba.
10 fresh mint leaves
1/2 lime, cut into 8 wedges
1/8 cup sugar
1 cup ice cubes
1.5 ounces white rum
1/2 cup club soda
- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler (or a fork if you don’t have one) to crush the mint and lime together.
- Add 2 more lime wedges and the sugar, and muddle again to release the lime juice.
- Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired.
- Garnish with an additional lime wedge.
